Tofu, Mango and Lime Salad with Peanut Sesame Sauce

Our savory peanut sesame sauce adds just the right kick to this delightful noodle salad. The mango also adds a nice sweetness. Great for kids as well.

  • 1 package of Annie Chun’s Organic Peanut Sesame Asian Meal Starter
  • 1-2 TBSP of sesame oil (or canola oil)
  • 1 mango, peeled and thinly sliced
  • 4 cups baby spinach leaves
  • 1 1/2 cups bean sprouts
  • 2 cups English cucumber, julienne cut
  • 2 TBSP chopped mint
  • 1 TBSP lime juice
  • 1 1/2 cups fried tofu, sliced
  • 2 TBSP chopped roasted peanuts

 

  1. Cook noodles as directed (al dente); rinse with cold water and drain.
  2. Toss noodles with sesame oil to keep from sticking then set aside.
  3. In a large bowl, combine remaining ingredients (except tofu, lime juice, and peanuts); add noodles and toss lightly with lime juice and half of peanut sesame sauce.
  4. Place noodle mixture on serving plate and top with sliced tofu.
  5. Drizzle remaining sauce over tofu and noodles.
  6. Garnish with chopped peanuts and serve.
