The quintessential Asian noodle salad. Great flavor, great textures and filling enough to be a great meal entrée or excellent as a starter or side dish.

1 cup cooked shredded chicken

1 package of Annie Chun’s Chow Mein Noodles or Soba Noodles (cooked as directed on package)

1/4 cup thinly sliced red bell pepper

2 cups chopped romaine lettuce (loosely packed), or cole slaw

1 cup English cucumber, cut into matchstick slices

1/4 cup chopped scallion

glazed walnuts or chopped peanuts (for garnish)
Dressing (makes about 1/2 cup)

6 TBSP Annie Chun’s Teriyaki Sauce

2 TBSP rice vinegar

2 TBSP sesame oil

Combine three ingredients for dressing and mix well.

Mix together chicken, noodles, and remaining ingredients (except nuts) in a bowl and toss with dressing (add to taste).

Garnish with glazed walnuts or chopped peanuts.
