Teriyaki Sesame Noodle Salad

The quintessential Asian noodle salad. Great flavor, great textures and filling enough to be a great meal entrée or excellent as a starter or side dish.

  • 1 cup cooked shredded chicken
  • 1 package of Annie Chun’s Chow Mein Noodles or Soba Noodles (cooked as directed on package)
  • 1/4 cup thinly sliced red bell pepper
  • 2 cups chopped romaine lettuce (loosely packed), or cole slaw
  • 1 cup English cucumber, cut into matchstick slices
  • 1/4 cup chopped scallion
  • glazed walnuts or chopped peanuts (for garnish)

Dressing (makes about 1/2 cup)

  • 6 TBSP Annie Chun’s Teriyaki Sauce
  • 2 TBSP rice vinegar
  • 2 TBSP sesame oil

 

  1. Combine three ingredients for dressing and mix well.
  2. Mix together chicken, noodles, and remaining ingredients (except nuts) in a bowl and toss with dressing (add to taste).
  3. Garnish with glazed walnuts or chopped peanuts.
Serves 2-3
