Spicy Beef Curry

A hearty beef curry over rice really hits the spot and you'll love this tasty but simple recipe.

  • 1 pound beef cubes (for stewing)
  • 2 TBSP Vegetable oil
  • 1/4 cup onions – large dice
  • 1/2 cup carrots – large dice
  • 1/2 cup celery – large dice
  • 1/4 cup button mushrooms
  • 1/2 cup potatoes – large dice
  • 2 cups water
  • 6 TBSP yellow curry paste
  • 3 TBSP Annie Chun’s Gochujang Sauce
  • Salt and pepper (to taste)
  • 1 package of Annie Chun's Sticky White Rice
  • 1/2 bunch green onions

 

  1. Slightly season the beef and sear in large oiled sauce pan at medium high heat. 
  2. Once beef is browned, put aside on a plate. 
  3. Saute onions, celery, carrots, and mushrooms. 
  4. Add water, curry paste, and Gochujang Sauce. 
  5. Bring all to a simmer and add beef. 
  6. Cook uncovered for 30 minutes. 
  7. Add potatoes and cook for another 5-10 minutes. 
  8. Adjust seasoning with salt and pepper. 
  9. Serve over rice and garnish with chopped green onions.
