Soba Noodle and Pear Salad

A delicious noodle salad recipe that is simple but delights the taste buds. The noodles are perfectly balanced with some texture and crunch from the pear and cucumber. Great as a light lunch or side dish for any meal. A great vegetarian option!

  • 1 package of Annie Chun’s Organic Soy Ginger Asian Meal Starter
  • 2 TBSP canola oil
  • 1/2 English cucumber, julienne cut
  • 1 firm pear, julienne cut (or substitute jicama)
  • 1 scallion, thinly sliced (white and green parts)
  • 1/2 cup chopped fresh cilantro
  • 1 sheet Japanese seaweed (nori), cut into thin stripsSnacks
  • 1-2 tsp sesame seed

 

  1. Cook noodles as directed.
  2. Rinse with cold water and drain well.
  3. Add oil to noodles to keep from sticking then cool completely.
  4. In a large bowl, lightly toss cooked noodles with sauce.
  5. Top off with cucumber, pear, scallion and cilantro.
  6. Garnish with nori and sesame seeds.
