Rice Noodle Soup with Chicken, Shiitake Mushroom & Scallion

This recipe is the perfect comfort food, Asian style. Nothing warms you up while filling you up better than a bowl of Chicken Noodle soup. Great for those cold days or anytime you need a little comfort.

  • 1 package of Annie Chun’s Pad Thai Rice Noodles
  • 4 cups of chicken broth
  • 2 chicken breasts, cooked and thinly sliced
  • 1 cup Shiitake mushrooms, thinly sliced (fresh or reconstituted)
  • 2 scallions, chopped
  • 1 TBSP of minced ginger
  • salt

 

  1. Cook the noodles as directed, drain, and set aside. 
  2. Heat chicken broth with ginger to a simmer. 
  3. Add shiitake mushroom; heat for one minute. 
  4. Add salt to taste.
  5. Divide noodles, chicken and mushroom into four bowls. 
  6. Serve broth over noodles; garnish with scallion.
Serves 3-4
