Peanut Noodle Salad with Shrimp and Pineapple

Pineapples, shrimp, cashew nuts, and peanut sesame sauce. Anyone interested yet? A wonderful, flavorful noodle salad sure to please anyone who’s ever liked a peanut.

  • 1 package of Annie Chun’s Organic Peanut Sesame Asian Meal Starter
  • 2 TBSP sesame oil
  • 8 to10 medium sized shrimp, cooked or grilled
  • 1 cup pre-washed baby lettuce
  • 1/2 cup canned or fresh pineapple, cut into one inch cubes
  • 1 scallion, thinly sliced
  • 1/2 cup fresh cilantro, coarsely chopped
  • 2 TBSP chopped cashew nuts or peanuts
  • 1 lemon or lime, sliced into wedges

 

  1. Cook noodles as directed on package; rinse with cold water and drain well.
  2. Add sesame oil to noodles to keep from sticking.
  3. Then, add sauce packet and remaining ingredients except cilantro, nuts and lemon to noodles.
  4. Toss until all ingredients are well mixed.
  5. Squeeze lemon over salad and garnish with cilantro and cashew nuts.
  6. Serve chilled or at room temperature.
