Island Chicken

Island Chicken

Bring the flavors and scents of the island to life with this great chicken recipe that is a great balance of savory and sweet. Kids love this one!

  • 3 TBSP Annie Chun's Korean Barbeque Sauce
  • 1 package of Annie Chun's Sprouted Brown Rice
  • 1 cup chicken breast- boneless, skinless (diced into 1 inch pieces)
  • 1/4 cup red bell pepper- large dice
  • 1/4 cup pineapple chunks
  • 14 cup of juice from pineapple chunks


  1. Salt and pepper chicken breast
  2. Heat large sauté pan with vegetable oil and sear chicken pieces.
  3. Lower heat to medium- low, add bell peppers, pineapple juice and Korean BBQ
  4. Let chicken simmer until fully cooked (6-7 minutes), basting chicken occasionally
  5. Finish with pineapple chunks and simmer another minute or so.
  6. Adjust seasoning with salt and pepper.
  7. Serve over Annie Chun's Sprouted Brown Rice or Annie Chun's Sticky White Rice (heat rice according to packaging).
