Chicken Noodle Salad with Pineapple and Raisins

A great noodle salad that is savory yet sweet with the flavors of pineapple and raisins. The bean sprouts and cashew nuts add a great crunch. Kind of fun to eat!

  • 1 package of Annie Chun’s Organic Peanut Sesame Asian Meal Starter
  • 1 TBSP vegetable oil
  • 1/2 cup cooked chicken breast slices (or baked tofu)
  • 1 cup pineapple, cut into 1 inch cubes
  • 2 TBSP raisins
  • 1 TBSP cilantro
  • 1/2 cup cashew nuts
  • 1/2 cup bean sprouts

 

  1. Cook noodles as directed.
  2. Add oil to noodles to keep from sticking then cool completely.
  3. Add the sauce package and remaining ingredients to noodles; toss well until evenly coated.
  4. Serve salad cold or at room temperature.
